As the people in offtopic knows, that I booked a flight to Germany, just to schlapp Julian, flight is already confirmed (October 25th), what are the chances there's gonna be a boost on COVID rates to cancel the flight.

It's depend on the situation in your country. Plus, once you arrive in the destination and then go back to your own country, there's more likely you'll force to stay in there for 14 days, especially risky areas.

Germany isnt that risky. You might also have these 14 days when arriving here

I know some countries isn't that risky, even in my country, but still, a 14 days is required. I'd consider that is the worse thing (at least my friend or family think like that as well), it's like a 2 weeks being in a jail
