This is probably because the nickname is longer than 16 characters, however if this isn't the case it might be just a bug in spigot 1.14 which is still in beta.

You could try to delete your playerdata, but there is no guarantee that this fixes your problem.

In the "generate world" dialog you are required to enter buffet into world type and the generation string into generator settings
However the easiest way is just to create a world in single player and upload it to the server.
