I also tried to see in the Log what the problem could be, but apparently the server is so "full" that everything is automatically deleted.

That means that something is going on your server which produces many many messages (Multiple gigabytes). This might come from the same source as the lag. Just have a look at the console/log before it gets cleared.
Which software do you use? Which plugins did you install on your server.
