We only save the latest log file for each server, so you can delete/overwrite your log by just starting your server again.

Alternatively, you can completely reinstall your server.

Text files can be edited, .dat files are not text files.

You can upload .dat files to your world folder without uploading a completely new world.

Did you change your server software?

Bedrock and Pocketmine have different/less options than Minecraft Java Edition.
