If you dont change your version resetting the nether doesn't change how it looks. It only resets the nether to it's original state

Minecraft versions on curseforge are defined per file. That mod has versions that you can install on 1.12.2

Minecraft world generation is seed based. The same world will always have the same nether unless they change the nether world Generation like they did in 1.16
