Modpacks are tested before getting added if they work on Aternos. When a modpack stops working the team usually removes the modpack. If it keeps crashing the team will probably remove it.

You can do that with plugins like ViaBackwards and ViaVerion, to allow older/newer clients join your server.
There are different reasons on why your server could have crashed. If your server crashes you should send your server log (https://aternos.org/log/).
