Try this:

Remove the mods one by one from your server.

Every time you remove a mod from your server, you need to restart it, then check if the problem still occurs.

If the problem doesn't occur anymore, know that it was probably due to the mod you last removed.

Looks like the config of some mod is wrong and crashed the server. Did you change anything in some config file?

Does she get any other error after encrypting?

First make a backup.

Then try generating a new world, if the server still crashes the problem is related with your mods. I found some mods with the version 1.16.2, 1.16.3 and 1.16.4 which probably won't work properly on 1.16.1. Those two options are the possible solutions for your problem.

Clientside means that those mods are not needed on the server, only on your client and they work perfeclty.

Btw, clientside mods: JEI, JourneyMap, I'm not sure if you have Waila/Hwyla. Try removing these mods

RAM won't change if there are more players though

The amount of RAM depends on software and version, you can see it when your server is online on the server page
