2. open the logs folder
3. open the "latest" or "latest.log" file with a text editor

You need to remove the Ticking entity as the server is crashing due to it. You can run /kill @e in the console to remove it or, if you can't do it, download the world and kill the entity in singleplayer then upload the world again

Yes you can change to 1.18 without lossing data but keep a backup of the server before doing it. The new world generation will be applied on the un explored chunks.

Quotemrcrayfish.guns is crashing because they are using a method they should not be using and which was removed in the latest version of Forge (1.18.1-39.0.45). Please report this to them and point them to https://github.com/MinecraftForge/MinecraftForge/pull/8235 for more details.
You will have to use an older version of Forge (1.18.1-39.0.44) until they fix this

Using an older forger version is not possible so remove mrcrayfish.guns mod for now and you can use the mod sometime later after it gets patched
The server is not crashing due to the forge version. It says

It looks like the Aternos system system stopped your server because it took too long for it to start. This can happen when a server is overloaded (too many plugins, resource-heavy modpack, etc.). The Aternos system automatically stops servers if they don't respond within a certain amount of time to prevent them from getting stuck during startup. Especially in the afternoon (Central European Time), when many servers run simultaneously, servers running many mods sometimes take too long to start.
Unfortunately, there is not much that can be done about this. You can only try to start your server again at another time, remove some resources (e.g. plugins/mods).
