how do i put a bigger vanilla enchant on a weapon? like a sword with sharpness 10, a pickaxe with fortune 7 etc..

Through combination using anvils. Let's say you've got two diamond swords with sharpness I and put them together in an anvil. You will get a diamond sword with sharpness II. You repeat the process and get a second diamond sword with sharpness II. You put these two diamond swords with sharpness II in an anvil again and get a diamond sword with sharpness III, etc., etc.…
However, I think this only works up to level VI (6) or so, at least for sharpness. Higher enchantment levels are only possible with plugins or mods.
