What is the address of the server in question?

The log you uploaded does not contain that message. It does not contain any connection attempt at all.
but... every single of these mods actually exist on the server
Do the versions of the mods match?

Note that it's a Fabric mod, so your server must be running on Fabric - not Forge!

As I said earlier: Even if it changes, it is not applied.
If the change in the configuration file persists - then it's a problem in the mod not reading your configuration change. Contact the mod developer then.

Share the client log. It's in .minecraft/logs/latest.log on your computer.
That message typically appears on fabric servers if the mods don't match.
