I'm sorry, but I don't really see the issue here? People can set their server icon to whatever they want, and the owner of that server changed it to that picture.

The easy option would be to just put your items in a chest before downloading your world.
The "real" fix is to open the level.dat file of your downloaded world in an NBT editor (like https://irath96.github.io/webNBT/) and remove the "Player" tag.

You're not downloading an old version of your world (we don't save old versions of your world), you're just using old player data when opening the world in single-player mode. Minecraft is saving playerdata differently depending on whether it's running in single-player or multiplayer, so Minecraft will use the single-player data from before you uploaded the world rather than the newer multiplayer data.

Spigot is the killer for every vanilla game mechanic. if you need plugins, then use Paper. Its changes the fewest things in the vanilla mechanics.
PaperMC changes a lot more Vanilla mechanics than Spigot. Spigot doesn't really change that much, while PaperMC fixes things that are considered bugs (like breaking bedrock or TNT duping). Most of these fixes can, however, be disabled in the paper.yml config.
