We honestly need way more control over our own servers. Setting the idle timeout does nothing because you automatically override it every 5-10 minutes and make it default again. We can't change world generation options, such as switching from say, Biomes O Plenty, to Default. And we can't disable/enable certain mods inside of a pack. This is honestly kind of ridiculous. It's our server. Not yours.

Right, and we won't change that.
We can't change world generation options, such as switching from say, Biomes O Plenty, to Default
You choose the level type in the new world dialog. If you use a mod or modpack which contains mods with own level-types they are normally automatically set. If you find a modpack which are wrong, you can report them here
And we can't disable/enable certain mods inside of a pack.
We only provide modpacks in their official configuration. Many users would mess up their modpack and can't play anymore.

There are many alternatives out there.
