I have another question I am concerned about,
when I install a Modpack on the multiplayer Server, can I activate/deactivate single mods in the pack?
Is there a plugin for stuff like that or do I have to play with ALL mods?

Nope this is not possible.

You have to play with the default configuration of the pack.
In Addition: Modpacks do not have Plugins.
