Hello, whenever I try to open my server it reaches the point where it says "starting", but then it goes to "stopping" and crashes. I am clueless why and am requesting help with this issue.

This log does not look like bukkit 1.12.2

the server is set to 1.12, not 1.12.2, I'm not sure if this matters. Here is the log. https://mclo.gs/me1e4HM
Edit: I just realized I used the log for my other server. I'm really sorry about that. The log above should be the right one.

Okay. I assume your world is corrupted.

Does that mean I can never use it again? Also if there's a way to fix it how do I do that?

You can try to delete the playerdata.
Deeper problems are not fixable by beginners.

Download your world, delete the players or playerdata inside the archive.
Then upload the world again.

I assume you have 2 Essentials plugins.
I think the problem is that you got the regular Essentials that is for 1.8 if you have delete the Essentials you have and keep the EssentialsX because it's for above the versions of 1.8.

Uhh, corrupted save. Restore a backup... If not, download your world and upload level.dat. If you can't because it's not there, let me know.

Oh, and also, EssaentialsX writes to ./plugins/Essentials

If my level dat says level.dat_old does that mean I should not upload it?

Make 2 copies of the world delete the file you mentioned in the first world and upload it back and check!
