I made a backup of my world on Spigot 1.14.4, and then updated my server's software to Spigot 1.15.1, but now, importing my world backup changes it back to 1.14.4. What should I do?
My backup keeps changing the software version.

That's intended.
A backup contains all data, version etc.
Just update the software in order to update.

If you are using Vanilla and change your version from 1.14.4 to 1.15.1, it wont reset your world.
1.15 added bees, honeyblocks and quality of life stuff.
So it wont really be a problem if you change the version from 1.14.4 to 1.15.1.
If something does go wrong, you can always revert back as you have a backup right? -
Yes, I have a backup. It’s just that my server runs on Spigot, which I thought updating would reset everything.

No, only switching the software / version where it is known that data is not compatible will reinstall the server, like forge <-> (paper|spigot|vanilla)
