    very few entities appear on our server (vanilla), the world has been moved from version 1.15.2 to 1.16.2, the bottom part has been removed. all farms operate at a quarter of their capacity, for example, a sludge production farm brought in ~ 600 sludge per hour, now ~ 40 per hour.     I'd actually guess that minecraft does that to keep the performance on a certain level, I suggest you switch to Paper to get better performance, additionally you can customize the spawn limits there
