I'm trying to get to the end in my world, but I fall straight through the portal, there's no end dimension for my server. How can I fix this.

Try generating it again, delete the DIM1 file located in the world folder

That's only when you use a server software for plugins. When you use any other software, you can only see the main world in the worlds tab; the other worlds (nether / end) are located inside the main world with the name DIM-1 and DIM1

You can make a BackUp for when things go wrong

You don't have to generate a new world, just delete the DIM1 file and start your server. Make a backup first though
