There is only 1 version of your world, you can't download any older ones by accident. The world that is on the server gets downloaded. If it was a singleplayer world before, simply make sure you are at the right coordinates

wdym? the more plugins you have the harder the ram is gonna work...
As long as the RAM isn't full, it has negligible to no effects on performance.
If it runs full, the server crashes.The CPU has a harder time with more plugins though, as well as having to run garbage collection more with less free RAM, which also takes up CPU resources

You can't. You most likely run forge or fabric which require a reinstall upon switching to every other software.
You can save your world by downloading it, installing whichever software you want and then uploading it again
