If you have Paper/Bukkit installed, you can go into files/bukkit.yml and scroll down to the 24th line "shutdown message". Change "Server closed" to whatever close message you want. That's the only customizable message I know.

Manually adding new versions for thousands of plugins is not possible. For mods/plugins available on Aternos, it is required that we can fetch new versions automatically.
Then Can’t You Make It Use Any Links Off The Spigot?
It's not in the spigotmc version list and therefore can't be fetched through the API.

The latest version available on spigotmc.org (1.16.5-3) is also the latest version available on Aternos.
Versions that are not listed on spigotmc.org won't be available on Aternos.

Please reduce the number of plugins you use, or check the log for any error, if persists then remove that plugin!
If not create a backup and try re-installing or removing some plugins!

And the server will not crash with 4 -5 players on it! It might be problems with your plugins!
You could reduce unwanted plugins and view the log to see any errors causing the server to crash!
and Essentials have /sethome then why another plugin for setting home?
