I accidently changed the server software to Fabric and I am wondering if my friends who use lunar client with forge mods can still play on it
Can Forge players play even if the server has Fabric software

If the server doesn't require players to install mods, and your friends' mods are client side, yes.
Also, use the backups feature. It also warns you on switch.
