I'd suggest using papermc over spigot. Before switching, make a backup.

On my Aternos server, I keep getting server lag and also mobs are randomly turning invisible in a chunk or the whole world and I have to relog to fix it. Sometimes plugins don't work, and blocks glitch out in a chunk or a block (see through, invisible, half invisible)
How do I fix it?

You should look at his problems more carefully...

As long as the RAM isn't full, it has negligible to no effects on performance.
If it runs full, the server crashes.
The CPU has a harder time with more plugins though, as well as having to run garbage collection more with less free RAM, which also takes up CPU resources
Paper is more optimized then spigot, i doubt that.
