Ich würde das anders formulieren.
TLauncher hebelt bestimmte Funktionalitäten von Minecraft aus wie z.b. SRV-Records.
Das hat nichts speziell mit uns zu tun.

We also tried changing the mod configs but it resets automatically when we enter the Aternos server.
So is it clearly an issue with the configuration files?
Did you already try to ask the mod creators, maybe on their Discord etc. ?

Start the server, when it's online try to execute that command in the console.
If it does not work you have to recover a backup

Do all entries in the server list refer to Earth097.aternos.me ?
That is a bedrock server, so you can't join with Minecraft JE

When i switch to vanilla and upload the world again it switches to forge by itself
That only happens when you recover a backup, not when you upload a world
