You should add a function to directly edit the text of the server.properties file, not just redirect to the options page. When you click on the options tab, it shows the GUI, but when you click on the server.properties file in the Files seciton, you can directly edit the text of the file.

We don't want certain values to be edited, thus only a set few options are available to be changed

Options page only shows a selection of properties which are very common.
If you open the server.properties on the files page you get more options. If you're missing one we can check if we can add it.
We can't allow some properties to be edited as the server wouldn't work with our system anymore then
