As you mentioned it did not crash before with Immersive Portals you can try to
Download your world and keep a screenshot of the mods you have then reinstall the server. After you reinstall the server upload the world and install the mods again then see if you face the issue.

I already restarted it several times, and it still has the same problem

Immersive portals has some issue with the latest fabric loader
