Can anyone please tell me if I can update my aternos server to 1.11 without losing my 1.10.2 world that I have now? and can I then use the new mechanics of 1.11 in that world?

Try to download your world and upload it after installing the new version
Sure, you can use the new mechanics of 1.11 but you have to search new regions wich are not generated before. Only there you can find the new things like the mansion
