Server suddenly crashed, also we havent any backup since we all new to these things. no mods installed and i only use few plugins (EssentialsX and LuckPerms). this is the last log after removing both plugins

Remove the mods one by one from your server.
Every time you remove a mod from your server, you need to restart it, then check if the problem still occurs.
If the problem doesn't occur anymore, know that it was probably due to the mod you last removed.

Guys I found the problem, somehow the server version going back to 1.19 that previously was 1.19.2 this is so embarrassing.
