So my server shut down on its own, after the server reset the game loaded and it went back by like 5 hours of made progress. 
Please help me understand how is this possible? I thought the server saves every 10 minutes and that there are no backups, so how is it possible my server just went back 5 hours in time? 
What type of software are you using
The save is the minecraft internal feature for world save.
It just saves the world data from RAM to the disk of the server.
Did this problem only happen once?

It happened only one time and that's it.
Then it happened. It makes not really sense to investigate this further
