My friends and I are unable to access our server due to the new mcpe update. We created a backup and then updated the server. This caused it to still be outdated. Without the backup there is nothing on the server.

No, stay on bedrock. Just update as you did.
And in terms of world do you mean the backup?
No, I mean download the world on the worlds page.
