Does changing java version change anything else?

I just found out that you can change java version from 8 to 11 but does it change anything like delete plugins or delete world and is it worth changing it?

I am using 1.16.3 and PaperMC with 18 plugins

Newer java has the potential to run better, though it can also make stuff incompatible

Some plugins may need newer java versions while others might not work on them.
