Just started my server and notice that paper is gonna drop support for Java 8 so i check the options and see that there are OpenJ9 Java version. I know nothing about coding and stuff, can anyone explain whats the different between java 11 and java 11 open j9?

Java is the java you know, like on your PC. (In our case OpenJDK)
OpenJ9 is a different implementation of Java which does something different. It can have positive or negative effects on your server. You probably have to make your own experience which one is best for your setup.
8,11 etc is just the java version

thx for the reply, iirc some plugins requires a specific java version (I think?), and i have no idea if switching could break any of them

Yes, some plugins have specific java requirements.
In most cases plugins working with Java 8 work also with Java 11, but not the other way around
