Hi, I have read a few threads here about the render distance on the servers and understand that it is limited. The main article on this issue states "If you still want to play with a normal render distance, we recommend switching to the PaperMC server software. After installing PaperMC, you can increase your render distance in the server.properties." However, after switching to paperMC, I still cannot see an option to increase render distance in server properties. Am I missing something? Any info would be great, thanks.

There's a "view range" option in https://aternos.org/files/server.properties
I recommend setting that value, which btw doesn't require you to have Paper to change it, to 6, and instead to go into paper.yml and set the no-tick-render-distance to your desired value. This will give you better performance with better view range -
