Your server isn't crashing right? That error is related to Fabric API. If you want to stop getting that error just download an older version of fabric API

It is crashing, and as you said it is related to Fabric API. Can I change the fabric API version on server side? The version currently is 12.5 (to 11.7 would be ideal right?)

I got confused. When I say fabric API, I actually mean the fabric loader.
Update: I uninstalled the mod "bewitch ment" and all of its requirements, and the server isn't crashing anymore. The problem was most likely due to incompatibility if I had to guess, although I'm not sure with what.

The fabric error wasn't related to the crash I was just saying so if you don't want to see that error .
